Collard greens are a favorite vegetable usually eaten year round in the south. It's also a favorite soul food. As traditions go, collards are usually eaten for a New Years Days entree (the leaves are supposed to resemble folding money), along with black-eyed peas or field peas and cornbread. This traditional meal is believed to ensure wealth in the coming year.
